Carrot Cake Cookies

Carrot cake is undeniably delicious – at least from my point of view. I love a good old slice of carrots in the form of cake, especially when I find heaps of raisins and moist cinnamony goodness in my spoonful!  To switch things up a little, I made these yummy carrot cake cookies that are whisked together in no time, I promise! They are filled with carrots, apples, oats, raisins, banana, peanut butter and cinnamon – nothing to say against that combination. You want that recipe? Keep on scrolling! 

why you should thank your carrots

Carrots are root vegetables that provide you with fiber (makes your gut happy), potassium (blood pressure control), vitamin K (plays role in blood coagulation) and anti-oxidants (cancer prevention). These bright orange buddies also contain a lot of beta carotene, hence the pretty colour. Beta carotene is converted to vitamin A in the body and is great for your eye health, growth & development as well as immune function. What did we learn about carrots today? They are a superstar among vegetables! So do your bodies a favour and keep on roasting them in the oven, shredding them into salads and hiding them in your cakes. Now, let’s do the obvious thing and put them in our cookies!

Servings: ca 12 delicious & nutritious cookies 


For this recipe you will need: 

2 apples, grated

2 carrots, grated

1 ripe banana, mashed

1/2 cup raisins

1 cup oats (fine ones)

2 heaped tbsp peanut butter

2 tbsp honey, maple syrup or agave

1 tsp cinnamon



  1. Preheat your oven to 180°C on fan mode and line a tray with baking paper. 
  2. In a big bowl, combine all ingredients and mix them well until the batter is creamy and thick. It will still feel slightly wet but that’s okay!
  3. With a tablespoon scoop the cookie dough onto the baking tray. About one heaved tablespoon yields one cookie. Flatten them out with your spoon and bake them in the oven for about 18-20 minutes or until golden brown and crunchy on the outside while soft in the middle. 
  4. Share them with your cookie-monster friends and appreciate the healthy goodness that you have created!
