Crunchy Roasted Chickpeas

In what form do most of us eat chickpeas? That’s right: hummus. But what are they? Chickpeas, also referred to as garbanzo beans, are legumes. They aren’t just a good source of proteins (19%) but also contain fiber and minerals. Through their fiber and protein compounds, chickpeas help us to control our blood sugar levels and keeping us full for longer. Also, the fiber contributes to gut health and aids our digestion. More great news: chickpeas are easily found everywhere in the world and can be turned into spreads, dips, curries, breads and even cakes! For this recipe you will need:
1 can chickpeas (240g), drained
1 tbsp olive oil
¼ tsp cumin
¼ tsp smoked paprika
½ tsp oregano
pinch of chilli flakes
salt and pepper
- Preheat the oven to 200ºC.
- Dry the chickpeas with a kitchen towel and place on a baking tray. Add the olive oil, cumin, smoked paprika, oregano, chili flakes, salt and pepper.
- Give everything a good stir and roast in the oven for 15-20 minutes or tuntil the chickpeas get golden and crunchy.
- Serve them in a salad, as a soup topping or in a little bowl for you and your fellow foodies to snack!
