Flourless Banana & Peanut Butter Bread

Peanuts are great energy boosters which is why we should eat them in moderation (though sometimes (often) I cannot help myself and eat a liiiiiittle bit too much PB (really just a little). They contain minerals (phosphorus, magnesium, copper), vitamins (B1, B3, B9, E), anti-oxidants (resveratrol) and nutrients, the full package! Servings: 1 gorgeous loaf
For this recipe you will need:
4 very ripe bananas
1 cup peanut butter
2 cups oats
1/2 cup honey
1 tsp baking soda
1 tsp cinnamon
pinch of salt
- Preheat the oven to 180°C and line a loaf tin with baking paper.
- In a blender, blend the bananas, honey, peanut butter and 1 1/2 cups of oats until smooth. Transfer to a bowl and stir in the remaining oats, cinnamon, baking soda and pinch of salt.
- Pour this mixture into the cake tin and bake for 25-30 min or until a knife comes out clean.
- Serve with honey and peanut butter. ♥ Happy breakfast! (or dinner, who knows..)
