Fudgy Chocolate & Date Squares (V)

The new year has arrived and to give you a little taste of what I have in store for you, I am releasing this gorgeous treat today! Chocolate date squares that have a hint of cinnamon, are fudgy on the bottom and crunchy on top thanks to flaked almonds and cocoa nibs. I can’t hold my horses so let’s cut to the chase and see some more mouthwatering photos, shall we?

an ode to almonds

Almonds are tree nuts that are very high in monounsaturated fats, protein, fiber and other essential nutrients. For example, almonds provide you with magnesium, manganese and vitamin E which is a fat-soluble antioxidant that helps to build up and maintain cell membranes in your body. Almonds are also known to help reduce blood sugar levels, lower blood pressure and regulate cholesterol levels. Even though you might buy a pack of almonds and check their calorie count (a handful is about 30g which can be translated to ~170 calories)  they promote weight loss and reduce hunger. So if you can stick to eating a handful each day, your entire system will thank you! If you can choose, always go for whole almonds that still carry their skin because that is where most of the antioxidants come from. Go ahead and treat yourself to a couple of almonds right now!

Servings: about 12 squares


For ths recipe you will need:


For the base:

1 cup almonds

1 cup pitted dates, soaked in warm water for 10 minutes

½ cup oats

3 tbsp peanut butter

2 tbsp maple syrup

½ tsp cinnamon

pinch of salt

2-3 tbsp plant-based milk of choice


For the topping: 

100g 85% dark chocolate

2 tbsp slivered almonds

1 tbsp cocoa nibs



  1. In a food processor, combine the dates, almonds, oats, peanut butter, maple syrup, plant-based milk, cinnamon and pinch of salt. Blend until all is well combined and sticky. Chunks may remain if you like it that way (I sure as hell do)!
  2. Line a rectangular baking tray with baking paper and press down this mixture firmly and evenly to form the base of these gorgeous chocolate squares!
  3. Next, melt the dark chocolate and pour it over the date-almond-oat base. Sprinkle the flaked almonds over the chocolate as well as the cocoa nibs.
  4. Place in the fridge for at least 2 hours or until the chocolate has completely set.
  5. Slice into squares and serve immediately, because be honest: can you wait any longer?
