Garlic Roasted Aubergine with Tahini Dip & Coriander

Whenever I get home knowing that this meal is awaiting me, I get super excited. I am a fan of colourful bowls filled with roasted veggies, fresh herbs and a creamy, rich and flavourful dips to finish it off! Roasted eggplant is so yummy when combined with nutty tahini and refreshing coriander. Go ahead and try this recipe – but before you scroll down to the ingredient list, let’s get you drooling across your keyboard.

Coming from Asia and East Africa, sesame seeds are derived from a plant called Sesamum indicum. Its compounds show a vast variety of vitamins, minerals and natural oils which are extremely beneficial for our physical and mental health. Though sesame seeds seem to be overlooked often when discussing a healthy balanced diet, they are so easy to incorporate in both savoury and sweet dishes! Even though they aren’t as popular as chia or flax seeds, they contain valuable nutrients including iron, zinc, copper, protein, vitamin E, thiamin, calcium, manganese and magnesium. Only good news about these sesame seeds, eh? For those who don’t know what tahini is: nothing but sesame seeds. Now that that’s sorted, let’s go and make a kick-ass dip!

Cooking Time: 25-30 min

Total Time: 30-35 min

Servings: 2

 

For this recipe you will need:

2 aubergines

3 red onions

4 cloves of garlic

2 tbsp olive oil

1 tbsp sesame seeds

½ tsp cumin

¼ tsp ground ginger

salt and pepper 

handful fresh coriander, chopped 

 

For the tahini dip:  

3 tbsp tahini

4 tbsp Greek yoghurt

1 tbsp maple syrup

1 tbsp strong tamari sauce

1 clove of garlic 

½ lemon, juiced

 

Instructions: 

  1. Preheat the oven to 180°C. Cut the aubergines into cubes, spread on a baking tray and add chopped onion, minced garlic, sesame seeds, the spices and olive oil. Roast in the oven for 25-30 minutes. 
  2. In the meantime, let’s take care of that tahini dip! In a mixer, blend the tahini together with Greek yoghurt, garlic, lemon juice, maple syrup and tamari until creamy. 
  3. Transfer the aubergine to a bowl, add the chopped coriander and top with some generous dollops of the tahini dip!
