Maple Roasted Plums with Coconut Yoghurt & Pumpkin Seeds (V, GF)

This dessert is super straight forward and probably one of the simplest dishes you can impress with. Plums are so juicy and tart – just perfect in combination with crunchy pepitas, cinnamon and a dollop of maple-sweetened coconut yoghurt.

Baking Time: 30 min

Total Time: 40 min

Servings: 2

For this recipe you will need:

3 plums, halved

1 tbsp maple syrup

½ tsp cinnamon

½ cup coconut yoghurt (or other)

to top: 

drizzle of maple syrup

⅓ cup pumpkin seeds, toasted

sprinkle of cinnamon

 

Instructions: 

  1. Preheat the oven to 180ºC on fan mode. 
  2. Place the plum halves on a baking tray with the flesh facing up. Drizzle with maple syrup and cinnamon and roast for 30 minutes. 
  3. To serve, spread some yoghurt on a plate, place the plums next to it and top with toasted pumpkin seeds, a drizzle of maple syrup and a sprinkle of cinnamon. 
  4. Enjoy this wonderful dessert – one that you can also have for breakfast! ♥
