Peanut Butter & Chocolate Energy Balls
In need of some energy? No problem, I got something that may be of help! These little power balls are such a great snack, I take them with me wherever I go and never feel the need to run into the supermarket and find an option B. These energy balls are filled with peanuts and peanut butter but these ingredients can be replaced by any other nut or nut butter, such as almonds, cashews, walnuts or pecans. Now get your hands dirty and roll roll roll some balls!

Dates are my absolute favourite item in the pantry! I enjoy their creamy texture, their caramelly aroma, their sweet taste and what I love the most is that fortunately, they happen to be good for me! They grow on date palm trees in Northern Africa, the Middle East and South Asia and provide us with a broad variety of essential nutrients. Not only are they a good source of dietary potassium, but 20% of a ripe date is made up of fiber, protein and trace elements such as copper, magnesium, selenium and zinc. The remaining 80% of dates are made up of sugar which is why they are relatively high in carbohydrates. We also find a selection of antioxidants in dates, including flavonoids, carotenoids and phenolic acid, which all contribute to preventing chronic diseases such as heart disease, cancer, diabetes and Alzheimer’s. While both fresh and dried dates are delicious, they have a different nutritional profile: fresh dates are lower in sugar and higher in vitamin C, but dried dates are higher in fiber, calcium and iron. Most of the dates that we buy in Western countries have already been dried, which is a great way of conserving them. However, if you’ve never tasted a fresh date and are curious to try them, go ahead and buy them in your local Middle Eastern supermarket. Now chop chop, let’s make some energy balls!

Servings: a whole lot of energy balls (~20)
For this recipe you will need:
2 cups rolled oats
3 cups dates, soaked
¾ cup cocoa powder
½ cup peanut butter
½ cup salted peanuts
½ cup shredded coconut
pinch of salt
2-3 tsp maple syrup
1 tablespoon coconut oil, melted
For the coating:
- In a food processor, combine the soaked dates, maple syrup, peanut butter and coconut oil. Blend until all is smooth and well combined.
- Add in the peanuts, cocoa, shredded coconut, rolled oats and salt and blend, blend, blend, blend until you have a sticky mixture that you can press into ball-shapes.
- With your hands (needless to say that your hands are spotless, right?), take about 1 tbsp of the batter and roll in between your palms to form a ball. After you have a mountain of little energy balls, roll them in a bowl filled with shredded coconut.
