A Very Berry Breakfast

I love breakfast. Would never skip it. Making breakfast (and obviously eating it) is a great reason to wake up, don’t you think? The thought of going into the kitchen, preparing a fresh cup of hot steaming coffee and whipping up some deliciousness excites me every single day. It simply never gets old.
For breakfast, I usually have some sort of porridge. Porridge is something so basic, cheap and simple yet exquisite. There are so many options you have when stirring your oats, starting from the milk you use (I love oat milk for example but also enjoy using almond, soy or coconut milk) and the toppings you prepare. For this very berry porridge, I used the following:
For the porridge base:
1 1/2 cup rolled oats
1 1/2 cup soy milk
1 1/2 cup water
For the berry compote:
150 g frozen berry mix
Toppings:
a handful of mixed nuts
coconut flakes
two tsp of Greek yoghurt
sprinkle of cinnamon
