Quick Pan Granola with Yoghurt & Stirred Berries (V)

In the morning, I oftentimes follow a specific routine. I get up, make tea, practise yoga, get dressed (or not), brew coffee and fix myself a pretty bowl with yoghurt, homemade granola, fresh fruits and peanut butter. I really, truly, fully enjoy that breakfast. But sometimes, it is nice to stir things around, incorporate a little change to find new likings, discover new preferences and make up new favourite dishes: same same but different. This was one of such mornings on which I took the same ingredients but did things slightly differently. The result was delicious and nutritious and that is why I am sharing it with you here and today, still sitting in my pyjama pants!

Oats are whole-grain, which is what we love because compared to refined grains, they are a much better source of fiber and nutrients. Additionally, oats are higher in protein than many other grains and provide you with antioxidants that help control your blood sugar and cholesterol levels, isn’t that fantastic? There seems to be some confusion about their gluten-content (which is only relevant to those who are intolerant to gluten. Gluten is a protein and not a mystified enemy!) and here is the answer: oats are usually gluten free BUT they are often handled in factories where there are also products containing barley, wheat and rye. Hence, contamination may cause for gluten to be present in the oats we buy UNLESS they are labelled glutenfree. Makes sense? Anyhow, either gluten-free or slightly gluten-contaminated oats are good for you and provide you not only with many minerals, nutrients and fiber, but they also offer a HUGE variety of ways to prepare them (more recipes will follow, of course). Cooking Time: 5 min

Servings: 1

 

For this recipe you will need:

½ cup oats

½ cup shaved coconut

¼ cup raisins

pinch on cinnamon

3 tbsp Greek-style yoghurt (plant-based)

½ cup berries of choice, either fresh or frozen (I used frozen raspberries)

1 tbsp maple syrup

 

Instructions: 

  1. Heat a frying pan and toast the oats, shaved coconut and raisins. Toast them until they turn crunchy and golden – two of my favourite words when it comes to food! 
  2. In a small pot, heat the berries with a dash of water and keep on stirring to make sure that they won’t burn.
  3. On a plate or in a bowl, assemble the pan-fried granola, top with yoghurt and then finish it off with some hot, stirred berries, a drizzle of maple syrup a sprinkle of cinnamon. ♥
