Apricot & Oatmeal Ovenbake

For the granola
Ingredients
3/4 cup rolled oats
3/4 cup oat milk
1/2 cup almonds, roughly chopped
1 tbsp ground flax seeds
1 tsp cinnamon
1 tbsp peanut butter
1 ripe banana, mashed
1 tbsp maple syrup
1/2 cup dates, chopped
1 tbsp raisins or currants
1 tbsp shaved coconut
4 apricots, quartered
to serve
coconut yoghurt or other yoghurt of choice
maple syrup
Instructions
Preheat the oven to 180Β°C.
In a bowl, combine all ingredients apart from the apricots. Stir well and pour into a baking dish. Top with the apricots and sprinkle a little more cinnamon on top, then bake in the oven for 20-25 minutes.
Serve with coconut yoghurt and enjoy this yummy, heart-warming breakfast.
