QUICK PAN GRANOLA WITH YOGHURT & STIRRED BERRIES

Same same but different

In the morning, I oftentimes follow a specific routine. I get up, make tea, practise yoga, get dressed (or not), brew coffee and fix myself a pretty bowl with yoghurt, homemade granola, fresh fruits and peanut butter. I really, truly, fully enjoy that breakfast. But sometimes, it is nice to stir things around, incorporate a little change to find new likings, discover new preferences and make up new favourite dishes. This was one of such mornings on which I took the same ingredients but did things slightly differently. The result was delicious and nutritious and that is why I am sharing it with you here and today, still sitting in my pyjama pants!

For this breakfast

 

Ingredients

½ cup oats

½ cup shaved coconut

¼ cup raisins

pinch on cinnamon

2 tbsp maple syrup

1 tbsp coconut oil

3 tbsp coconut yoghurt or other yoghurt of choice

½ cup berries of choice, either fresh or frozen

Instructions

  1. Heat a frying pan and toast the oats, shaved coconut and raisins. Add in the maple syrup and coconut oil once the pan is hot and the oats have been toasting for a bit, then stir occasionally so it doesn’t burn.

  2. In a small pot, heat the berries with a dash of water and keep on stirring to make sure that they won’t burn.

  3. On a plate or in a bowl, assemble the pan-fried granola, top with yoghurt and then finish it off with some hot, stirred berries, a drizzle of maple syrup a sprinkle of cinnamon.
