Sourdough with Whipped Ricotta & Pangrattato

What a joy to share this simple, indulgent recipe with you! It’s creamy, herby, crunchy and slightly sweet - which are a perfect combination with a steaming cup of freshly brewed coffee. Good morning, y’all!

For this dish

 

2 thick slices of sourdough

1 tbsp olive oil

4 tbsp ricotta

1 tsp runny honey + more to serve

salt and pepper to taste

2 tbsp pangrattato (find the recipe here)

a few leaves of fresh oregano

Instructions

  1. Preheat your oven to 180°C and line a baking tray with parchment paper. Place the sourdough slices on the paper, then drizzle some olive oil on top and roast them for a few minutes, until they get a bit crunchy.

  2. In a small bowl, whip the ricotta along with some salt, pepper and a little bit of honey.

  3. Place the sourdough slices on two plates, then spread with the ricotta, add pangrattato on top, drizzle with some more honey and garnish with fresh oregano. More fresh pepper and another pinch of flakey salt are also always a good idea, so go for it. Then roll back your sleeves and tuck in!
