Sabich

definitely drool-worthy

Need I say more? This Israeli sandwich is filled with goodness and tastes like more! Out of sheer necessity of not getting a good Sabich anywhere close by, I loaded that pita with roasted eggplant, boiled egg, soft potatoes, pickled onions, lots of tahini, fresh parsley and spicy harissa. YUM!

For the sabich

 

Ingredients

2 wholegrain pitas

2 hardboiled eggs

2 - 3 medium sized boiled potatoes

tahini

fresh parsley, finely chopped

1 - 2 tsp harissa paste, diluted in 2 - 3 tbsp water

fresh lemon juice

salt

For the pickled onion


Ingredients

2 medium sized red onions

1/2 cup water

1/4 cup balsamic vinegar

1/4 cup apple cider vinegar

1 tbsp raw cane sugar

1 tsp salt

for the eggplant

Ingredients

2 eggplants

2 - 3 tbsp olive oil

2 tsp maple syrup

1/2 tsp cumin

salt

Instructions

  1. Skin the red onions, then half them and slice into fine half moons. Combine other ingredients in a small pot and heat til it simmers, then take off the stove. Add the onion slices to a jar, then pour the hot mixture over them and let this sit for at least 30 min.

  2. Preheat your oven to 200ยฐC and cut the eggplants into 1/2cm thick slices lengthwise, then then cut them in the middle. Line a baking tray with baking paper and place the eggplant on it, then drizzle with olive oil, maple syrup, cumin and a few generous pinches of salt. Roast in the oven for about 40 min and make sure to turn them halfway through.

  3. When you're ready to assemble your Sabich, briefly place the pitas in the often to warm them up. Cut the eggs and potatoes into slices, then salt them.

  4. Now, let's make some magic: Slice half of the pita open and drizzle tahini and some harissa on the dough. Stuff 1 - 2 eggplant pieces into the bottom, then top with potato and egg. Sprinkle some fresh parsley on top as well as a small handful of pickled onion. Repeat the tahini & harissa drizzle as well as the other steps. Finish off with a mouthful of all ingredients as well as a squeeze of lemon.

  5. Dig in and get your face messy because that's what it's about!
