Sweet Potato & Pear Fritters with Guacamole and Poached Eggs

Needless to say that I’m really into sweet potatoes which is the exact reason for why I’m putting them into dish after dish after dish. In this case, I paired them with pears - which was a rather good idea, I must say..

Fry these, dig in and tell me how good it was!

For the fritters

 

Ingredients

1 medium sized organic sweet potato (ca. 340g), grated

1/2 ripe and sweet pear, grated

2 garlic cloves, minced

1 red onion, finely chopped
1 egg

Salt and pepper to taste

3/4 cup (75g) chickpea flour 

drizzle of olive oil for the batter

olive oil for frying

1 ripe avocado, mashed

1/2 lemon, juiced

Salt and pepper to taste

Fresh chives, chopped

4 organic eggs, poached

Instructions

  1. In a big bowl, combine the grated sweet potato, pear, egg, garlic, onion, salt and pepper as well as the chickpea flour. Give this mixture a good stir until all ingredients are well combined and no dry patches remain. If you feel that the fritter batter it’s still a bit too wet, you can add 1-2 tbsp more of the chickpea flour.

  2. In a pan, heat a bit of olive oil on medium heat and fry each fritter until browned on each side. (I usually fit three fitters into the pan at once and use about 2-3 tbsp of the mix per fritter.)

  3. While the fritters are busy frying, you can mash the avocado, add in the lemon juice, salt and pepper. Set aside.

  4. When the last round of fritters is done, get ready to poach the eggs! Crack one egg at a time into a small bowl, then fill half of a small pot with water and heat it until it simmers, add a splash of apple cider vinegar (this helps the egg to keep its shape) and with a spoon, whirl the water so that it swirls in the middle. Pour the egg right into the centre of that swirl and let it simmer for 3 minutes or until cooked to your liking. Take the egg out of the water with a slotted spoon, then repeat with the remaining eggs.

  5. To assemble the dish, place 2-3 fritters on your plate, top with guacamole and the poached eggs, then sprinkle some chives, salt and pepper on top. Yum! Enjoy these fritters and keep me posted if you tried other delicious toppings (I highly recommend caramelised onion and spinach..)
