Fruity Tomato & Lentil Dal

For the soup
Ingredients
1 tbsp coconut oil
2 onions, chopped
3 cloves of garlic, minced
3 cups vegetable stock
1 cup dried red lentils
½ tsp ground cumin
1 tsp ground turmeric
¾ tsp ground ginger
½ tsp chili flakes
2 plum tomatoes, chopped

a handful of fresh parsley
coconut milk
Instructions
In a pot, heat the coconut oil and fry the onions and ginger together with the cumin, turmeric, ginger and chili.
Add the tomatoes and allow them to soften before you add the lentils as well as the vegetable stock. Cover the pot with a lid and allow the dal to simmer for another 25 minutes while occasionally stirring.
Serve in bowls and top with fresh parsley and a dash of coconut milk. Devour and warm your heart!
