Fudgy Chocolate & Date Squares

Who’d say no to that?

Chocolate date squares that have a hint of cinnamon, are fudgy on the bottom and crunchy on top thanks to flaked almonds and cacao nibs. I can’t hold my horses so let’s cut to the chase and make these, shall we?

For the Base

 

Ingredients

1 cup almonds

½ cup oats

1 cup pitted dates, soaked in warm water for 10 min

2-3 tbsp plant-based milk of choice

3 tbsp peanut butter

2 tbsp maple syrup

½ tsp cinnamon

pinch of sea salt

Toppings

100g 85% dark chocolate, melted

2 tbsp slivered almonds

1 tbsp cacao nibs

Instructions

  1. In a food processor, combine the dates, almonds, oats, peanut butter, maple syrup, plant-based milk, cinnamon and pinch of salt. Blend until all is well combined and sticky. Chunks may remain if you like it that way (I sure as hell do)!

  2. Line a rectangular baking tray with baking paper and press down this mixture firmly and evenly to form the base of these gorgeous chocolate squares!

  3. Melt the dark chocolate and pour it over the date-almond-oat base. Sprinkle the flaked almonds over the chocolate as well as the cocoa nibs.

  4. Place in the fridge for at least 2 hours or until the chocolate has completely set.

  5. Slice into squares and serve immediately, because be honest: can you wait any longer?
