No Bake Peanut Butter & Jam filled Chocolate Bites

no-bake date & peanut chocolate bites, perhaps? But what's missing in this title is the FILLING which, to everyone's information, consists of smooth peanut butter and roasted peanuts and mouthwateringly simmered forest berries. You want that recipe? Keep reading:

FOR THE DOUGH
Ingredients
1 cup roasted peanuts
1 cup pitted dates, soaked in warm water for 10 minutes
pinch of salt
FOR THE filling
Ingredients
1 tsp creamy peanut butter per bite
handful of roasted peanuts
1/2 cup cooked and cooled berries, sweetened with 1 tbsp maple syrup, use 1 tsp per bite
FOR THE chocolate coating
Ingredients
ca. 80g dark chocolate (I used 90%)
1 tsp coconut oil
Instructions
In a food processor, blend up the peanuts until they have a floury consistency. Next, add in the soaked dates and pulse until a smooth, sticky batter forms.
Roll the batter into balls (about tsp of batter/ball), then place on parchment paper. Use your thumb to press little moulds into each ball so make space for your filling.
Fill each bite with about 1 tsp of either creamy peanut butter or stirred berries. Top the peanut butter ones with a few roasted peanuts.
Place the bites in the freezer while melting the chocolate in a small metal bowl over a hot with simmering water. Add in the coconut oil and stir in until no clumps of chocolate remain.
Dip every bite into the chocolate using a fork and/or spoon, then place back on the parchment paper and top with a pinch of sea salt.
Place the bites in your freezer or fridge for one hour, then don't forget to ENJOY each BITE of each BITE!
