OAT & QUINOA CHOCOLATE CHIP COOKIES WITH ROASTED PEANUTS

Ingredients
¾ cup ground oats
⅓ cup coconut sugar
½ cup peanut butter
2 tbsp maple syrup
2 tbsp plant-based milk
pinch of salt

⅓ cup tri-colour quinoa
80g 85% dark chocolate, roughly chopped
½ cup roasted & salted peanuts
Instructions
Preheat your oven to 180ºC and line a tray with baking paper.
In a bowl, combine the oat flour, oats, salt, quinoa and coconut sugar. Roughly stir until it’s all mixed through.
Add the peanut butter, maple syrup and plant-based milk and make that cookie come together! Once the dough is nice and sticky, add the peanuts and chocolate chips and fold them in. With your hands, form cookies and bake them in the oven for 10-12 minutes or until crunchy on top and golden brown.
