OAT & QUINOA CHOCOLATE CHIP COOKIES WITH ROASTED PEANUTS

My love for cookies will never end.

Did you hear me? Never! These babies are full of crunch, dark chocolate chips, roasted peanuts and – you might have not expected this – quinoa! If you like chocolate chip cookies, do yourself a favour and try these ones. To me, they are the perfect treat and satisfy my sweettooth that loves sweet, crunchy, chocolatey and nutty!

Servings: 9 - 12 chunky cookies

For the cookies

 

Ingredients

¾ cup ground oats

⅓ cup coconut sugar

½ cup peanut butter

2 tbsp maple syrup

2 tbsp plant-based milk

pinch of salt

add ins

½ cup oats

⅓ cup tri-colour quinoa

80g 85% dark chocolate, roughly chopped

½ cup roasted & salted peanuts

Instructions

  1. Preheat your oven to 180ºC and line a tray with baking paper. 

  2. In a bowl, combine the oat flour, oats, salt, quinoa and coconut sugar. Roughly stir until it’s all mixed through. 

  3. Add the peanut butter, maple syrup and plant-based milk and make that cookie come together! Once the dough is nice and sticky, add the peanuts and chocolate chips and fold them in. With your hands, form cookies and bake them in the oven for 10-12 minutes or until crunchy on top and golden brown.  

  4. Serve them with hot tea, coffee, chai latte or some golden turmeric milk. Appreciate the crunch, the sweetness, the saltiness, the chocolate, the peanuts – this is a moment that can be felt with all your presence. Don’t miss out on that joy of tasting something new!
