Bircher Muesli Breakfast Bowl

This dish is super quickly assembled and prepared the night prior to our beloved breakfast celebration. The juices of the grated apple in combination with a little bit of lant-based milk make the oats soft and creamy, which is heaven when combined with nutty peanut butter and crunchy toppings! Oaty, cinnamony breakfasts are my absolute favourite and it’s nice to use similar ingredients yet switch between different ways of preparing them. Are you up for a bowl of Bircher muesli? For the bircher muesli

 

Ingredients

1 cup oats

1 1/3 cup plant-based milk of choice

1 apple, grated

2 tbsp peanut butter

2 tbsp shredded coconut

1 tbsp flax seeds

1 tbsp chia seeds

1 tbsp raisins

pinch of cinnamon

toppings

roasted pecans

shaved coconut, toasted

roasted pumpkin seeds

maple syrup

fresh apple

plant-based milk

Instructions

  1. In a bowl, combine the oats, plant-based milk, grated apple, peanut butter, shredded coconut, flax seeds, chia seeds, raisins and cinnamon. Stir well and store in the fridge overnight.

  2. The next morning, stir the bircher muesli once more so that all liquids combine. Top with chopped apple, pecans, pumpkin seeds, shaved coconut and a splash of maple syrup. If you want, you can pour some more plant-based milk over it all - much recommended!
