Umami Sweet Potato Mash with Pine Nuts

So much umami

Sweet potatoes are one of my favourite things - I usually just chop them, dress them in olive oil, sprinkle them with salt and roast them until they turn mouthwateringly crisp. But hey - this mash is packed with flavour and will show you a different side of those beautifully coloured sweet potatoes. Let’s mash!

For the Mash

 

Ingredients

2 sweet potatoes, peeled and cubed 

1 tbsp miso paste

1 tbsp olive oil 

1 tbsp apple cider vinegar 

salt and pepper to taste

25g pine nuts, toasted 

Instructions

  1. Boil the sweet potato cubes in salted water for 20 - 25 minutes or until soft.

  2. Once they’re soft, drain them and retain the water.  

  3. Place the cooked sweet potato in a food processor or blender along with the miso, salt, pepper olive oil, apple cider vinegar and 2 - 3 tbsp of the retained water that you boiled the sweet potato in. Blend until completely smooth or let it remain slightly chunky, if you prefer.

  4. Transfer the mash to a bowl, spread evenly and top with the toasted pine nuts and freshly cracked black pepper. Serve alongside roasted vegetables, salads, tempeh or whatever else you’re in the mood for!
