No Bake Tahini Bites

I admit it, aI’m a snacker.

Every afternoon, around 4pm, I’m in the mood for a ‘lil something. An apple? Good. A handful of nuts? Also not bad. A healthy granola bar? We’re getting closer. A delicious and nutritious tahini cookie? YES, WE FOUND IT! These little cookies or should I say energy balls are filled with goodness featuring cocoa, tahini, sesame seeds and cinnamon. What’s not to love? They are super easy to prepare and don’t require baking. The liquids are simply put together and quickly heated and once our gorgeous ball-cookie-shapes are formed, we put them in the fridge. Look at these photos and go grab the tahini from your cupboards, cause this is bound to happen!

For the bites

 

Ingredients

3 tbsp tahini

1 cup oats

⅓ cacao powder

5 tbsp maple syrup

3 tbsp coconut oil

1 tsp vanilla extract

½ tsp cinnamon

pinch of salt

2 tbsp sesame seeds

Instructions

  1. In a pot, heat the tahini, maple syrup, coconut oil and vanilla extract. Once the liquids are heated, stir in the cocoa, cinnamon and salt.

  2. Take the pot from the stove, add the oats and fold them in. Allow the mixture to cool for a few minutes, then form small balls with your palms ( about 1 tbsp makes one cookie). Pour the sesame seeds in a small bowl and roll the balls in it until all are evenly covered.

  3. Place in the fridge for at least 30 minutes and you know what’s next: devour them with a happy heart and a wide smile.
