Peanut Butter & Cacao Energy Balls

For the energy balls
Ingredients
2 cups rolled oats
3 cups dates, soaked in warm water for 10 min
¾ cup cacao powder
½ cup peanut butter
½ cup salted peanuts
½ cup shredded coconut
pinch of salt
2-3 tsp maple syrup
1 tablespoon coconut oil, melted
to roll in
shredded coconut
Instructions
In a food processor, combine the soaked dates, maple syrup, peanut butter and coconut oil. Blend until all is smooth and well combined.
Add in the peanuts, cocoa, shredded coconut, rolled oats and salt and blend, blend, blend, blend until you have a sticky mixture that you can press into ball-shapes.
With your hands (needless to say that your hands are spotless, right?), take about 1 tbsp of the batter and roll in between your palms to form a ball. After you have a mountain of little energy balls, roll them in a bowl filled with shredded coconut.
