Peanut Butter & Cacao Energy Balls

No problem, I got something that may be of help! These little power balls are such a great snack, I take them with me wherever I go and never feel the need to run into the supermarket and find an option B. These energy balls are filled with peanuts and peanut butter but these ingredients can be replaced by any other nut or nut butter, such as almonds, cashews, walnuts or pecans. Now get your hands dirty and roll roll roll some balls!

For the energy balls

 

Ingredients

2 cups rolled oats

3 cups dates, soaked in warm water for 10 min

¾ cup cacao powder

½ cup peanut butter

½ cup salted peanuts

½ cup shredded coconut

pinch of salt

2-3 tsp maple syrup

1 tablespoon coconut oil, melted

to roll in

shredded coconut

Instructions

  1. In a food processor, combine the soaked dates, maple syrup, peanut butter and coconut oil. Blend until all is smooth and well combined.

  2. Add in the peanuts, cocoa, shredded coconut, rolled oats and salt and blend, blend, blend, blend until you have a sticky mixture that you can press into ball-shapes. 

  3. With your hands (needless to say that your hands are spotless, right?), take about 1 tbsp of the batter and roll in between your palms to form a ball. After you have a mountain of little energy balls, roll them in a bowl filled with shredded coconut. 

  4. Alrighty, we’re good to go: now grab some of these little monsters and have them as your delicious and nutritious snack!
